21mm collagen casings are used for snack stick products like pepperoni but also work great for breakfast sausage links. Sausage sticks made with these casings are normally cured, cooked and/or optionally smoked. Other specially formulated snack stick spices are also available from Hi-Country. Collagen type casings are processed to have a consistent diameter throughout its length and are dry stuffed (no soaking or prepping). Casings are shirred (collapsed) when produced and when stuffed expands to its original length of 49 feet. These casing are best stuffed with a 12mm outside diameter stuffing horn. Each package contains 2 clear strands (21mm x 49'). Each casing has a capacity for 10 to 14 lbs. of meat for a total of 20 to 28 lbs. per package.
